Tahoe Breakfast Casserole (SCD)
My husband’s family introduced me to a heavenly (and sinful) breakfast they called the Tahoe Breakfast. It’s an egg casserole with hashbrowns, sausage, and cheese baked in; and is delicious. It’s one of my husband’s favorite things to eat during the winter, but is not by any means SCD (or figure) friendly. I substituted the hashbrowns for grated turnips and used an SCD friendly sausage that I found on one of my favorite blogs Comfy Belly.
Ingredients (serves 4)
1 pound breakfast sausage (SCD legal, either purchased or made fresh)
2 turnips – peeled, and grated (use a food processor with grater blade if you have one)
6 eggs – beaten
1 cup grated Gruyere cheese
1 tablespoon Dijon mustard
1 tsp ground nutmeg
3 green onions – chopped
salt and pepper
Over medium high heat, brown the sausage then drain the grease and crumble into bite size pieces.
Grease an 8×8 baking dish.
Combine eggs, turnips, cheese, spices, mustard, and onions in a bowl. Add the sausage and then pour into prepared baking dish.
Bake at 350° for 45 minutes, then cover with foil and bake another 20 minutes until turnips are soft and eggs are cooked through. Let cool for 15-20 minutes before cutting into the casserole.
