Berrylicious Baked Oatmeal (Vegan and Gluten Free)

My husband was away on business, so the rest of us didn’t have an agenda yesterday morning and rolled out of bed at 9am (dog included!). The extra sleep felt so glorious!

Luckily I made this baked oatmeal the night before so I could continue the lazy morning and not have to worry about preparing breakfast!  It’s so wonderful on a hectic morning too when you barely have time to get a shower and get out the door.

I usually use 2 eggs in this recipe, but since I’m avoiding them right now I used a flax seed substitute instead. Just follow the instructions on this site. 4 tablespoons of the “flax egg” equals 1 egg.

You’ll be amazed at how easy this is. No boiling or soaking necessary. We make it in the mountains when there’s a full house of people. The best part is that it tastes great piping hot or luke warm, so those hibernating bear type kiddos can still enjoy it when they finally awake.

Be creative with your toppings! Almond milk, raisins, walnuts, Greek yogurt, or a drizzle of maple syrup. Or my favorites, a little apple or peach sauce on top!

Ingredients (serves 6)

3 cups Gluten Free rolled oats
1/2 cup pure maple syrup
1/2 cup honey (eliminate honey and add extra maple syrup if vegan)
1/2 teaspoon AllSpice
1/2 teaspoon ground nutmeg
1 and 1/2 teaspoons cream of tarter
1/2 teaspoon baking soda
1 teaspoon Celtic sea salt
1 cup + 2  tablespoons almond milk
8 tablespoons Vegan Egg substitute (made with flax seeds and water!)
1/2 cup grapeseed oil
2 teaspoons pure vanilla extract
1/4 cup blueberries  
1/4 cup raspberries 
1/4 cup blackberries

Directions

Preheat oven to 350 degrees F.

Make your flax seed mixture over the stove and then set aside to cool while you mix the rest of the oatmeal ingredients.

Combine all of the ingredients in a large bowl. Gently stir in the berries at the end (fresh or frozen will work just fine!).

Using a little grapeseed or coconut oil, grease the bottom and sides of a 9×13 baking dish. Pour oatmeal mixture in and bake 40 minutes.

That’s it! Easy and delicious!
